As a famous traditional dish of Guilin, it is mainly prepared with Lipu Taros, streaky pork with skin, Sanhua liquor and preserved bean curd. Firstly, fry preserved streaky pork and tar cubes; place the sliced pork in a bowl with the skin down and insert taro cubes between every two pieces of pork, and stem the bowl until the taros and pork are well done. Then place the bowl upside down on another plate. Though fat, the steamed pork is not greasy. It is the most popular dish in Guilin. An old saying goes: “It is not a banquet without Upside-down Lipu Taros and Streaky Pork.”
Filled Shaddock with Mashed Pork
It is a special local dish of Guilin. The way to prepare the dish is: Peel a shaddock, soak it into clean water for a few days to get rid of its bitter taste, cut the shaddock into cubes, make a deep groove in each cube, fill each cube with ready prepared lean pork, and stew them over a low fire. When the late premier Zhou Enlai paid a visit to Guilin, he spoke highly of this dish.

It is a famous dish of Yangshuo. Cut a living carp from the Lijiang River into large pieces. Please don’t scale the fish. Fry the fish, add locally produced ginger, green peppers, tomato, seasonings and beer to it, and stew the fish over a low fire. This fish is tender, with a beautiful color, a good smell and a delicious taste.
This dish originates from the rural areas in the suburbs of Guilin. The rice fields in Guilin teem with carps, three to five cun long (1 cun = 1/30 m), which live on grain flowers, hence the name Grain Flower Carp. The way to prepare this dish is very simple: clean the fish, take out all the internal organs of the fish, open the fish and place it flat on a pot, add a small amount of ginger, onions and other seasonings to it, fry the fish, add a small amount of water and stew it. Landscape Bean Curd
This dish is in the shape of the peaks in Guilin, hence the name. Cut bean curd into triangles, open a trough at the top of each triangle-shaped bean curd, fill the trough with mashed meat, place them on a porcelain plate and steam the bean curd until it is ready.
