Shandong Cuisine, with its exquisite procedures and unique styles, is one of China’s eight cuisines. It is famous for its wide selection of material and use of different cooking methods. Shandong Cuisine is popular through out Beijing, Tianjin and Northeast China and its techniques have been widely absorbed by the imperial dishes of Ming and Qing Dynasties.
More commonly known as Lu cuisines, Shandong Cuisine is derived from the native cooking styles of Shandong. It consists of three major styles: Jinan cuisine, Jiaodong cuisine, and Confucius Mansion cuisine. Shandong is a large peninsula surrounded by the sea, with the Yellow River meandering through the center. As a result, seafood is a major component of Shandong cuisine.
Jinan cuisine is fresh and tender, emphasizing the original taste of food. The famous dishes include: Sweet and Sour Yellow River Carp, Jinan Roasted Duck, and Quick-fried Pork Kidney. A truly authentic “sweet and sour carp” must come from the Yellow River.
Jiaodong cuisine features great seafood. The key is to keep the original tastes. The famous dishes include: Stewed Shelled Abalones, Courtyard Sea Cucumbers, Prawns Steamed in Clear Broth, and Quick-fired Sea Snail.
Confucius Mansion cuisine is a unique type of Chinese aristocrat cuisine developed by generations of master chefs at the Confucius Mansion. It is particular about exquisite cooking. The famous dishes include: Stewed Duck with Pigeon, First-rank Tofu, and Scholarly Ginkgo.
The southwest Shandong region abounds in beef and lamb and is famous for lamb soup. Its dishes have strong bold flavors, showing the style of “eating meat in big chunks and drinking wine with jorums.”
In Shandong there are lots of featured dishes, such as Mount Tai Tofu Feast, Whole Fish Feast, and Yellow River Estuary Fish Soup.

Mount Tai boasts three delicacies which are cabbage, tofu and water. The Tofu of Mount Tai can be cooked for a long time without getting hardened, and people can make hundreds of delicious dishes with the same Tofu. That’s how the Tofu Feast is prepared.
The Whole Fish Feast is a lake area delicacy. Several fresh lake fish are selected and cooked with different methods such as steaming, stir-frying, stewing, simmering, and deep-frying. The Feast thus consists of fish of various flavors.
The Yellow River Estuary Fish Soup is made with live fish from the Yellow River estuary. It features milky broth, delicate flavor, and rich nutrition.
