Originally founded in 1416 during the Ming Dynasty, Bianyifang is the oldest Peking roast duck restaurant in Beijing with the history of nearly 600 years. The time-honored brand specializes in roast duck, duck delicacies and Shandong-style cuisine.
There are generally two methods of roasting Beijing duck: with closed oven (where the heat is from inner oven wall ) and with half-open oven (where the duck is hung over heat source such as fire ). Bianyifang’s roast duck is the representative of the closed oven type, specially made soup is filled into the duck and during the cooking. In this way, the roasted duck maintains a good form, with skin that sticks to the meat and gives off a glowing luster. The outside of the duck is crispy and the inside is juicy and tender, with a luscious flavor and a long-lasting aftertaste. Bianyifang Roast Duck Restaurant has made its name by using this method.
In addition, since Bianyifang makes use of a conventional convection oven, in which no flames come into direct contact with the duck, Bianyifang Roast Duck is reputed as “The Green Roasted Duck”.
Bianyifang presents trademark ducks in different flavors, such as flower scent (tea, lotus and date flavors), garlic scent and vegetable scent, which are de-greased and worthy of a try.
Bianyifang’s main competition has been Quanjude, another restaurant specializing in Peking Duck. Many native Beijingers prefer Bianyifang because the price is reasonable and it is convenient and comfortable with many branches. This restaurant has also successfully received former US President George Bush and foreign state leaders of many other countries.
